We first dined there in <a href="https://www.missingpersonsrv.com/dining/harbinger-des-moines-iowa" target="_blank">October of 2020</a>, then again in <a href="https://www.missingpersonsrv.com/dining/harbinger-des-moines-iowa8688475" target="_blank">May of 2021</a>. We enjoyed the tasting menu on previous occasions so we decided, without much discussion, to try it again.<br /><br />Because Harbinger is now one of our favorite restaurants in the country, a bit more explanation as to why seems like the thing to do.<br /><br />Harbinger doesn&rsquo;t shout; it whispers, then surprises you. Chef Joe Tripp&rsquo;s vegetable-forward, Southeast Asian&ndash;leaning cooking has earned national attention, but the best way to understand what makes this <a href="https://www.dsmwestside.org/drake-area/" target="_blank">Drake neighborhood</a> restaurant special is through the&nbsp;<strong>Tasting Menu</strong>.<br /><br />The format shifts often, usually five tightly (we had six) composed courses, each one a small study in contrast: bright citrus against deep umami, clean herbs beside fermented heat, delicate seafood framed by peak-season produce. Tripp uses the tasting menu as a canvas for ideas he&rsquo;s refining for the main menu, so the progression feels both personal and experimental without slipping into preciousness.<br /><br />Service is warm and well-paced, and the room&mdash;dim, intimate, almost contemplative&mdash;keeps the focus on the plate. Portions are intentionally modest, but the flavors are anything but. It&rsquo;s a meal built for diners who enjoy curiosity and craftsmanship over opulence. I liken it to dining at <a href="https://www.le-bernardin.com/home" target="_blank">Le Bernadin</a> in New York City, but infinitely more accessible.&nbsp;<br />&#8203;<br />In a city whose dining scene is maturing quickly, Harbinger remains one of Des Moines&rsquo;s clearest expressions of modern, chef-driven cooking. She has Tuesdays and Wednesdays off each week.<br /><br />We haven't left the monument much, taking a few days to spend in Grand Junction and then a few days here and there to do a day trip nearby.<br /><br />As we left the monument after Melanie's shift on Monday afternoon, the temperature in Jensen was 103 degrees Fahrenheit. An exquisite dry heat.<br /><br />As luck would have it, Steamboat Springs, Colorado is 150 miles east of us. Mercifully, that placed the cab of Miranda in the shade traveling towards the Rockies.&nbsp;<br /><br />By the time we arrived in Steamboat, the temperature was in the low 80's and after checking in at the local <a href="https://koa.com/campgrounds/steamboat-springs/" target="_blank">KOA,</a> we arrived at our dinner spot in downtown Steamboat and enjoyed our dinner outside in the mid 70's.<br /><br />From Monday evening on, we enjoyed nighttime temps in the 50's and daytime temps in the low 80's. In summer, the restaurant has roll up doors that open out to Yampa street where there are a number of tables situated under trees and not too far away is the <a href="https://www.traillink.com/trail/yampa-river-core-trail/" target="_blank">Yampa River Core Trail</a>&nbsp;that follows the Yampa River for miles.<br /><br />A cold beer was nice after our drive over from Jensen, Utah. Melanie had a White Sangria to start our dinner experience.<br /><br />I chose the Smoked Trout &amp; Chopped Kale Salad, Melanie had Pan Seared Rocky Mountain Trout. Alas, I'm not that person.<br /><br />Maybe it's the lack of good dining choices recently for us living in Jensen, Utah, but no, the food and dining experience at B&eacute;same is truly remarkable.<br /><br />When planning our Steamboat trip I used my tried and true Google method for finding dining experiences of searching the city name and James Beard. I found out that the chefs at B&eacute;same, Hannah Hopkins and Joe Campbell, were <a href="https://static1.squarespace.com/static/60369957bbecb00d2bb186b9/t/6553f783f76455015433121a/1700001682225/About+Besame.pdf" target="_blank">invited to cook at the James Beard House</a> in New York City. After seeing what they prepared for that meal, that was recommendation enough for me.<br /><br />B&eacute;same offers both <a href="https://www.besamesteamboat.com/eat" target="_blank">Tapas and a nice selection of </a></span><span style="color:rgb(31, 31, 31)"><a href="https://www.besamesteamboat.com/eat" target="_blank">entr&eacute;es</a>.&nbsp;<br /><br />Melanie ordered three of the Tapas, starting with the Aji Amarillo Ceviche, followed by Smoked Shishitos, and Octopus a la Brasa (I don't expect to taste Octopus as good as this, maybe ever again). I ordered the Quesobirria Tacos (short rib of beef, queso asadero, achiote tortilla, jalapeno, onion, cilantro, bone broth, salsa de arbol, salsa verde, black beans). Melanie's entree was their Halibut and I had the Cured Duck Breast.&nbsp;<br /><br />From start to finish our meal and experience was over the top great. Service, food, ambiance. Yes.<br /><br />Earlier in the day we'd cycled in the monument and needed a snack before we headed back to camp to cleanup for dinner.<br /><br />A few people with whom Melanie works recommended <a href="https://www.tacopartygj.com/" target="_blank">Taco Party</a> to us when they learned we were traveling to Grand Junction. Specifically, and to a person, Taco Party's guacamole was mentioned.<br /><br />Taco Party happens to be a sister restaurant of Bin 707 Foodbar so this seemed a natural choice for a mid-afternoon snack and libation.<br /><br />Welp, the recommendations were not wrong. Best guac we've eaten lately, maybe ever. The beers were cold and refreshing too after our cycling. We chose the covered deck overlooking the cove. A very nice setting for dinner.<br /><br />The restaurant's celebrated chef has a number of restaurants and has won numerous awards over the years, including being inducted into James Beard Foundation's&nbsp;<a href="https://www.jamesbeard.org/education/whos-who-food-and-beverage-america" target="_blank">Who's Who of Food and Beverage in America.<br /><br />&#8203;</a>That said, while our dinner was truly solid, the service and ambiance great, it wasn't what I expected given all the accolades received by Ms. Lynch.&nbsp; My Steak Tartar and Mustard Tagliatelle (braised rabbit and rosemary) dish was fine, Melanie's Seared Halibut was superb.&nbsp;<br /><br />My problem is I've eaten <a href="https://stittrestaurantgroup.com/" target="_blank">Frank Stitt's</a> rabbit dish at Highland's Bar and Grill in Birmingham, Alabama on several occasions and, honestly, I can also be a bit precious at times when it comes to dining out.&nbsp;<br /><br />I think most importantly our meal at The Rudder was a good value, that is, I didn't come away thinking I'd paid too much for an overhyped dining experience. But I did.
